Curing the meat is part of the process to eat it! When you cure food you prep it for consumption thus curing the food makes it less harmful when consumed. You asked “why would you eat something that has to be cured” and you were answered.

1st what is food preparation, back in the day it was an art (still is) that took long hours to prepare foods, this carried on over to the new world. Curing the food served many purposes, such as preserving and adding flavor as well removing impurities. They cure Beef, do you whine over that as well? Curing can be achieved in different ways and was used and still used in light of refrigeration. People are gluttonous by that meaning all food is/can be harmful, that’s why we stress moderation.
